Stourhead grows its own strawberries and they are delicious in this recipe

Ingredients

  • 300ml (10.6fl oz) whipping cream
  • 1tbsp caster sugar
  • 100g (3.5oz) ready-made meringue
  • 450g (1lb) fresh, ripe strawberries
  • 1tbsp icing sugar

 

Method

1. Place whipping cream and caster sugar in a large bowl and whip with an electric mixer until the cream is light and fluffy – take care not to overwhip

2. Break meringue into large, bite-size chunks and gently stir into cream

3. Place half of the strawberries into a separate bowl and press gently with the back of a fork to slightly break up the fruit

4. Add crushed strawberries to cream

5. Halve and quarter remaining strawberries

6. Put cream mixture into four glass serving bowls, top with remaining strawberry pieces and chill in fridge for 30 mins

7. Just before serving, sprinkle with icing sugar
