Cheese tea with red onion marmalade in the Edgcumbe on Cotehele Quay

Ingredients

  • 3 medium red onions, chopped or sliced
  • 2 tbsp oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp red wine
  • 1 tbsp brown sugar
  • salt and pepper to taste

Method

  1. Heat oil over a low heat and add chopped onions. Cook slowly for 30 minutes, stirring occasionally
  2. Remove from heat and add vinegar, wine and sugar
  3. Cook for a further 15 minutes, until mixture thickens
  4. Remove from heat and season with salt and pepper to taste
  5. Serve with local cheese and homemade scones
