Homemade courgette and cheese soup


  • 1kg sliced courgettes
  • 1kg potatoes
  • 1kg chopped onions
  • 50g (1.8oz) vegetable bouillion
  • 450g (15.8oz) english soft cheese (rind off)
  • 2.5 litres of water
  • salt and pepper


  1. Place all the ingredients - except the cheese - in a large saucepan
  2. Cover, bring to the boil, and simmer gently for 35 minutes until the vegetables are tender
  3. Stir in the cheese until melted
  4. Blitz until smooth
  5. Adjust the seasoning to taste
