Make the most of the apple harvest by trying this delicious recipe

Ingredients

Pastry

  • 175g (7oz) plain flour
  • 90g (4oz) chilled butter cut into cubes
  • 2 tablespoons cold water

Filling

  • 180g (7oz) self raising flour
  • 120g (4oz) ground almonds
  • 180g (7oz) butter or margarine
  • 180g (7oz) caster sugar
  • 2 teaspoons ground mixed spice
  • 5 eggs
  • 180g (7oz) pureed soft apple
  • Cinnamon sugar

Method

Prepare the pastry first

  • Rub the flour and butter together until it resembles fine breadcrumbs
  • Slowly add the water to make a dough
  • Roll the pastry out and use it to line a flan tin

For the filling

  • Beat the sugar, butter, flour, eggs and ground almonds until the mixture is nice and smooth
  • Spread the pureed apple over the pastry base
  • Gently pour the filling over the apples and pastry
  • Spread evenly and cook for between 35 and 40 minutes at 170 degrees centigrade
  • Once cooled, lightly sprinkle the cake with cinnamon sugar
