Cup cakes are always popular so why not bake them with a twist in autumn

Ingredients

Cup cake mix

  • 9oz (240g) butter
  • 9oz (240g) self raising flour
  • 9oz (240g) caster sugar
  • 4 eggs
  • 6oz (165g) peeled, cored and finely chopped apples

Streusel topping

  • 3oz (70g) plain flour
  • Half teaspoon ground cinnamon
  • 2oz (40g) butter
  • 3oz (70g) soft brown sugar

Method

Prepare the topping by rubbing the ingredients together until they resemble breadcrumbs.

To make the cup cakes:

  • Cream the butter and sugar together
  • Mix in the flour and eggs
  • Add the apples and mix well
  • Spoon the mixture into cup cake cases
  • Top with the Streusel crumb mix
  • Bake in a 200 degree centigrade oven for between 12 and 16 minutes
  • Best served with a cup of tea while still slightly warm
