Grab a bunch of beetroot and make a cake


  • 180g (6.5 oz) plain flour
  • 2 tsp baking powder
  • 75g (2.5 oz) cocoa powder
  • 250g (9 oz) caster sugar
  • 3 large eggs
  • 250g (9 oz) cooked beetroot (not in vinegar)
  • 200ml (7 floz) sunflower oil
  • 1 tsp vanilla essence


Pre-heat oven to 200°C / 400°F.

Sift flour, baking powder, cocoa powder and sugar into a bowl. Blend the eggs, beetroot, vanilla and oil in a blender until smooth. Fold the beetroot mixture into the sifted dry ingredients.

Turn the mixture into an 8" lined cake tin. Bake for 40 minutes until risen and set. Cool the cake on a wire rack. Decorate with chocolate icing if you wish.
