1.2 kg (2lbs 10oz) potatoes
240g (8 1/2 oz) leeks
8 garlic cloves
240g (8 1/2 oz) cheese
2 tbsp chopped basil
225g (8 oz) shortcrust pastry
Ground black pepper to taste
Peel and chop the potatoes into small chunks, then boil until soft and leave to cool, and the same for the leeks.
Crush the garlic and grate the cheese into a large mixing bowl. Add the basil, pepper, potatoes and leeks and mix thoroughly.
Roll out the pastry to fill an 8 inch flat tin, then add the mixture, spreading it evenly to fill the tin.
Cook the pie in the oven at Gas Mark 6 / 200 C for 45 minutes, until the mixture is golden brown and the pastry is cooked.
Serve warm with leaf salad and coleslaw.
