Lady Hilarias Wholemeal Loaf

10 oz stoneground wholemeal flour
6 oz organic strong white flour
1oz of butter or hard margarine
1 teaspoon salt
2 teaspoons fast acting dried yeast
1 tablespoon oat bran
1 teaspoon dark brown sugar
1 teaspoon black treacle
1/2 pint + 3 tablespoons warm water
Topping: 2 teaspoons sesame seeds brushed on with milk.
Mix all dry ingredients (except sugar and yeast) in a large mixing bowl.
Rub in the butter.
Mix in the dry yeast.
Stir the treacle and sugar into very warm water.
Make a well in the middle of bowl of ingredients and pour in the liquid.
Knead (by hand or machine) for at least 10 minutes.
Place the now elasticated and smooth dough onto a floured board.
Pummel out the air and shape the dough.
Place the dough into a greased loaf tin, cover and put in a warm place to rise till double in size (about 1hr)
10 minutes before the end of this process sprinkle on the sesame seeds and gently brush in with milk.
Cook in a pre-heated oven, on moderate heat for approx. 35-40 minutes (bottom of loaf should sound hollow when tapped.)
Leave to cool on a wire rack.
