Joe's Pickle

A savoury tea from the Courtyard Cafe at Montacute House

Ingredients

  • 450 g peeled onions
  • 675 g cooking apples, peeled and cored
  • 450 g stoned dates
  • 450 g sultanas
  • 450 g soft brown sugar
  • 1 level teaspoon of salt
  • pinch of cayenne
  • 500 ml spiced or pickling vinegar

Method

Coarsely chop the onions, apples and dates in a food processor and place in a large mixing bowl.  Add the sultanas, sugar, salt and cayenne. Pour over the vinegar.  Mix well.  Cover with a cloth and leave overnight (add extra vinegar if necessary).  Spoon into jars and cover with a waxed disc and cellophane.  This will keep for around 6 months.
