Old Fashioned Rhubarb Pie


4 cups diced rhubarb
½ tsp nutmeg
½ tsp cinnamon
Pinch of salt
¼ cup white sugar
¼ cup brown sugar
1½ tblsp flour


3 eggs
1 small can carnation milk
½ cup white sugar


Combine the fruit, spices, sugar and flour in a bowl and mix well.
Place into an unbaked 10” sweet short crust pastry pie base.

Combine the eggs, milk and sugar and pour the mixture over the rhubarb.

Cover the pie with a solid, sweet, short crust pastry top (or lattice strips) and brush with milk or egg to glaze.

Bake in a 220ºC (gas mark 7) oven for 15 minutes, and then reduce heat to 180ºC (gas mark 4) and bake for a further 30 minutes, or until the crust is golden.

Serve plain, or with a huge scoop of ice-cream – delicious.
