Picked plums at Hanbury Hall

Ingredients

  • 2 eggs
  • 140ml/4fl oz oil
  • 100g/4oz granulated sugar
  • 100g/4oz soft brown sugar
  • 1 tsp vanilla essence
  • 175g/7oz plain flour
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • 400g/1lb plums, stoned, roughly chopped into pieces
  • 1 large carrot grated.

 

Method

1.    Preheat oven to 170ºC/Gas Mark 4.

2.    Grease and line the base of a 1kg/2lb loaf tin.

3.    Whisk together the sugars, oil, eggs and vanilla essence.

4.    Mix in the chopped plums and grated carrot.

5.    Fold in the plain flour, baking powder and cinnamon.

6.    Spoon into baking tin.
