Apple and sultana sponge cake

  • 1 springform tin, lined and lightly greased
  • 6oz self-raising flour
  • 6oz sugar
  • 6oz margarine
  • 3 freedom food eggs
  • 1/2 teaspoon mixed spice
  • 1 large cooking apple, diced into large pieces
  • 2oz sultanas


This delicious cake, which is a favourite with our visitors, can also be made gluten free. Simply replace the self-raising flour with rice flour.

  • In a large bowl, beat the margarine and sugar until nice and creamy
  • Add the eggs one at a time, beating well after each egg has been added
  • Add the flour and mixed spice, followed by the diced apple
  • Gently pour half of the mixture into the tin and top with the sultanas
  • Pour the remaining mixture over the top of the sultanas
  • Put your mixture into the oven and bake at 180 degrees for between 25 and 30 minutes
  • If you're using a fan-assisted oven, reduce the heat slightly to between 160 and 170 degrees, depending upon your oven
  • Finally, once cooked, sprinkle the cake with sugar and serve with fresh cream. It will last three days - if you don't eat it first
