Cheesy Herb Bread

Tea-room cheeses


250g self-raising flour
40g butter
125g Cheddar cheese, grated
Salt and pepper
Small bunch of chives, chopped
1 egg, beaten
150ml milk
1tsp Dijon mustard


  1. Preheat the oven to 200°C/400°F/Gas 6.
  2. In a bowl, rub the butter with the flour and salt and pepper until the mixture resembles fine crumbs. Add the cheese and chives and mix together.
  3. Add the mustard and most of the egg, then gradually mix in the milk to form a soft but not sticky ball.
  4. Knead on a floured work surface until smooth. Shape into a circle.
  5. Cut into six segments and place on a baking sheet. Brush the tops with the remaining egg.
  6. Bake in the oven for 15 minutes or until well-risen and golden.
