Trelissick Kea Plum Jam

- 900g (2lb) good-flavoured plums
- 100ml (31⁄2fl oz) water
- Juice of 1 lemon
- 900g (2lb) granulated sugar
Wash the plums, and place them in a pan with water and lemon juice. Cook gently for about 10 minutes, until the skins have softened.
Stir in the warmed sugar until it has completely dissolved and then increase the heat and bring to the boil. Boil rapidly for about 10 minutes, or until setting point is reached and then pot
With damsons and other small plums, you can cook the fruit whole and remove the stones as they rise to the surface, once the sugar has been added. You can skim them off with a slotted spoon.
