Try Mrs Horton’s recipe for herb stuffing cakes

Ingredients

  • 250g (8oz) stale white bread
  • 4 or 5 sage leaves
  • A handful of mixed fresh herbs, according to choice and availability
  • 1 small onion, peeled
  • 1 small egg
  • Salt and pepper to taste

Method

  1. Chop bread into fine crumbs.
  2. Chop sage leaves and other herbs finely.
  3. Chop onion very finely.
  4. Mix all together with salt and pepper.
  5. Combine well with a beaten egg.
  6. Make into small cakes and fry in butter until brown.
  7. Serve with roast meats.
