Using local bread, organic fruit and free-range eggs. (serves four)
Ingredients
- 8 slices of white bread (crusts removed)
- 25g/1oz butter
- 2oz mixed organic fruit (sultanas, raisins and currants)
- 1tsp cinnamon
- 400ml/14fl oz whole milk
- 3 free-range eggs
- 25g/1oz caster sugar
- Pinch of nutmeg
Method
- Grease a 1 litre / 2 pint pie dish with butter.
- Spread each slice of bread on one side with butter.
- Put a layer of the bread, butter side up, in the bottom of the dish.
- Add a layer of dried fruit, sprinkling of cinnamon and a little sugar.
- Repeat this until all the bread is used up but make sure you finish with a layer of bread.
- Beat together the eggs and milk and pour over the bread evenly.
- Sprinkle the top with the remaining sugar and the nutmeg.
- Leave to soak for 30min.
- Place in a pre heated oven 180C/355F/Gas 4 for 40-45 mins until set and golden brown.
