    Nymans Traditional Bread and Butter Pudding

    Using local bread, organic fruit and free-range eggs. (serves four)

    Ingredients

    • 8 slices of white bread (crusts removed)
    • 25g/1oz butter
    • 2oz mixed organic fruit (sultanas, raisins and currants)
    • 1tsp cinnamon
    • 400ml/14fl oz whole milk
    • 3 free-range eggs
    • 25g/1oz caster sugar
    • Pinch of nutmeg

    Method

    • Grease a 1 litre / 2 pint pie dish with butter.
    • Spread each slice of bread on one side with butter.
    • Put a layer of the bread, butter side up, in the bottom of the dish.
    • Add a layer of dried fruit, sprinkling of cinnamon and a little sugar.
    • Repeat this until all the bread is used up but make sure you finish with a layer of bread.
    • Beat together the eggs and milk and pour over the bread evenly.
    • Sprinkle the top with the remaining sugar and the nutmeg.
    • Leave to soak for 30min.
    • Place in a pre heated oven 180C/355F/Gas 4 for 40-45 mins until set and golden brown.
