In a move to make the home-made food served in National Trust restaurants and tea-rooms more relevant to the surroundings in which it is consumed, Chefs and Managers from Trust properties in West Midlands Region, have used archive material to develop menus which are historically linked to their property, but which still appeal to the modern palate.
This enables the chefs not only to use the wonderful products that are grown at the properties but also to develop some exciting and tasty menus for the entire season. Chefs have been experimenting with such delicacies as spinach, apple and goat’s cheese pie with nutmeg pastry, and rhubarb and orange bread & butter pudding.
