Devilishly good damson gin

We don't know many people who can resist a small glass of damson gin. It's simply delicious!

  • Preparation time 20 minutes  (prep. time)
  • Serves makes 1 bottle

Ingredients

  • 1 lb/450g damsons
  • 3oz/85g sugar
  • 1 bottle gin

Method

 

  1. Prick the damsons with a needle. Put them in a preserving jar and add sugar and gin
  2. Shake the jar every day for a month, then leave until Christmas
  3. Strain back into the gin bottle
  4. Use straight away or even better leave to mature for another year (if you can!)
