Quarry Bank Mill's Pea Soup


  • One Cos (Romaine) Lettuce
  • 500g Onions
  • 500g Frozen Peas
  • 1 Bunch of Fresh Mint
  • 1kg Potatoes
  • 4ltrs Vegetable Stock
  • Salt & Pepper to taste


Peel and chop the onions and potatoes. Add to a large saucepan and cover with the vegetable stock. Bring to the boil and then simmer for fifteen minutes (or until smooth). Once smooth, add the remaining ingredients and bring to the boil once again. Simmer for a remaining fifteen minutes (or until smooth). Serve hot.
