Bake your own delicious Houghton Mill scones


To make 8 large scones you will need:
•    1lb (450g) flour = 2oz (56g) Houghton Mill flour + 14oz (394g) self-raising flour
•    4oz (112g) butter
•    4oz (112g) caster sugar
•    4oz (112g) sultanas
•    2 heaped teaspoons baking powder
•    Milk and water (equal quantities) to mix


This is what you'll need to do:

First pre-heat your oven to 190°C (fan) or 210°C (regular), gas mark 5.

  1. Grease a baking tray
  2. Melt the butter
  3. Sieve together the flour, sugar and baking powder into a bowl
  4. Make a space in the centre of the mixture and pour in the melted butter
  5. Mix it all together using your hands or a flat bladed knife
  6. Add in the sultanas
  7. Use just enough milk and water, adding a little at a time, to make the scone mixture hold together without crumbling (not too much or the mixture will become very sticky)
  8. Gently form the mixture into a flat round shape, patting it flat using your hands
  9. Cut into rounds and transfer to the baking tray
  10. Place in the oven for 25-30 minutes or until golden brown on top
  11. Enjoy eating yummy warm scones with jam and cream
