Bramley apple crumble scones

Scone of the Month celebrates Downton’s last chapter, which was filmed at two of our places. So why not indulge with a Golden Bramley Apple Crumble scone?

Ingredients

For the crumble:
  • 88g plain flour
  • 30g oats
  • 38g caster sugar
  • 63g plant-based margarine or butter
For the apples:
  • 500g bramley apples
For the scones:
  • 750g self-raising flour
  • 188g plant-based margarine or butter
  • 120g caster sugar
  • 6g ground cinnamon
  • 400ml milk or plant-based drink

Method

Step 1

For the crumble, place the plain flour, oats and caster sugar into a bowl. Rub in the plant-based margarine or butter until you have a mixture that resembles breadcrumbs.

Step 2

Peel the apples, cut into quarters, remove the core and then dice. Put these to one side.

Step 3

Preheat the oven to 180°C and line your baking trays with baking paper.

Step 4

For the scones, weigh the flour and plant-based margarine or butter and place them into a large bowl. Using your fingertips, rub the ingredients together until the mixture resembles fine breadcrumbs.

Step 5

In the large bowl for the scones, add the sugar, cinnamon and the diced apple – mix gently to combine. 

Step 6

Mix ¾ of the 300ml (225ml) of your milk or plant-based drink into the dry mix, adding the remaining amount as needed until you have a dough that is soft but not too sticky.

Step 7

Tip the mixture onto a lightly floured worktop and using your hands, gently knead the dough.

Step 8

Roll the dough so that it's approximately 4cm thick and cut into 12 equal-sized pieces, rerolling the dough as needed.

Step 9

Place the remaining milk or plant-based drink into a bowl and put the crumble mix onto a tray.

Step 10

Dip the top and roll the side of each scone in the milk or plant-based drink. Then repeat the same process, this time dipping the tops and rolling the sides of the scones in the crumble mix. Places the scones on the lined baking tray.

Step 11

Place in the oven and bake for 20–25 minutes or until risen and lightly coloured. Choose to serve with apple compote and whipped cream or custard.
