Lemon and white chocolate scones

A vibrant, zesty, chocolate twist on a simple scone recipe. Learn to make lemon and white chocolate scones, a perfect afternoon treat for the whole family.

Ingredients

  • 750g self-raising flour
  • 185g butter or plant-based margarine
  • 120g caster sugar
  • 120g white chocolate drops or plant-based white chocolate drops
  • 2 lemons, zest and juice (keep the juice of half a lemon separate for the icing)
  • 275ml semi-skimmed milk or plant-based milk

To finish

  • 200g icing sugar

Method

Step 1

Preheat the oven to 170°C (150°C fan/gas mark 3).

Step 2

Into a large bowl, add the self-raising flour and butter or plant-based margarine. Rub together using your fingertips until the mixture resembles fine breadcrumbs.

Step 3

Add the caster sugar and mix gently to combine.

Step 4

Add the white chocolate or plant-based white chocolate drops and the zest of the lemons into the mix. Mix until evenly distributed.

Step 5

Add the juice of one-and-half lemons and ¾ of the semi-skimmed milk or plant-based milk into the dry mix. Mix until you have a dough that is soft, but not too sticky, adding the remaining milk if needed.

Step 6

Tip the mixture onto a lightly floured surface. Roll the dough until it's approximately 4cm thick. Use a 7cm straight-edged round cutter to cut out 12 scones. Re-roll the dough if needed.

Step 7

Place the scones onto a lined baking tray and brush the tops with semi-skimmed milk or plant-based milk.

Step 8

Place in the oven and cook for 20-25 minutes until risen and lightly coloured.

Step 9

Leave to cool.

Step 10

To finish, mix the icing sugar with the remaining juice of half a lemon to make a thick icing. Use a piping bag or spoon to drizzle the icing over the top of the scones and allow to set before serving.

Salted caramel and butternut squash scones 

With a sticky caramel glaze and soft scone centre, these salted caramel and butternut squash scones are an indulgent sweet and salty treat. Serve them with a dollop of clotted cream and an extra drizzle of caramel.
