Louie's Gingerbread Cake

We discovered a lovingly made recipe book by Castle Ward staff and volunteers. We've made a few in the tea-room and they've all been perfect so these ladies obviously knew a thing or two about baking. This ginger cake recipe is a perfect bake for a cold winter - warming, rich and sweet.

Louie's gingerbread cake recipe

  • 310g/10oz Plain Flour
  • 2 tsp Ground ginger
  • 2 tsp Ground cinnamon
  • 1tsp Bicarbonate of Soda
  • 110g/4oz Butter (or Margarine)
  • 110g/4oz Soft Brown Sugar
  • 2 Eggs
  • 140ml/ 1/4 pint Boiling water
  • 150g/4oz Black Treacle
  • 150g/4oz Golden Syrup


  1. Grease 10" square cake tin and line the bottom with greased paper.
  2. Sift the flour, spices and soda together in a large bowl.
  3. Melt the butter sugar, syrup and treacle together gently and pour into the dry ingredients.
  4. Stir in well beaten eggs and lastly the boiling water. Mix well and pour into the prepared cake tin.
  5. Bake for 40 - 45mins at 180 degrees (165 for fan assisted ovens) or Gas Mark 4.

Notes: Louie adds that "A few sultanas or raisins added make it extra good."
