Chocolate Cookies

A classic biscuit. Top tip from our Food and Beverage Manager: don’t overcook the cookies, they should still be quite soft in the middle when removed from the oven, they will firm up as they cool but still be chewy in the centre.

Chocolate cookies fresh out of the oven
  • Preparation time 15-20 minutes (prep. time)
  • Cooking time 12-14 minutes (cooking time)
  • Serves 12


  • 500g Baking margarine

  • 375g Caster sugar

  • 125g Soft dark brown sugar

  • 115g Golden syrup

  • 15ml Vanilla flavouring

  • 750g Self-raising flour

  • 100g Cocoa powder


  1. Place the margarine and sugars in the bowl of your mixer, attach the paddle beater and mix on medium speed until light and fluffy, scraping down as required.

  2. Add the golden syrup and vanilla flavouring, mix again

  3. Add the flour and mix on a low speed until incorporated

  4. Add the remaining ingredients ad mix gently until combined

  5. Use an ice cream scoop to weigh out the balls of mixture onto your lined baking tray, flatten gently.

  6. Place in the oven at 160c, cooking for around 12-14minutes or until golden and cracked, remove from oven and leave to cool.
