Red Gooseberry and Vanilla Cream Slice
The perfect recipe for those left over scones.
- 8 Fruit or plain scones – chopped into chunks
- 500g Fresh Red gooseberrys (swap out with any fresh fruit you have available)
- 5 Eggs
- 50g Melted butter
- 2 teaspoon Vanilla extract
- 100g Soft brown sugar
- 250ml Fresh milk
- 250ml Double cream
Place chopped up scones into a lined tray bake tin.
In a bowl mix together the melted butter, vanilla extract, milk. Cream with the sugar and eggs. Mix well.
Pour over your chopped up scones, leave to soak for a couple of minutes.
With your hands gently press the scones into the liquid.
Place your chosen fruit over your scone mix and press down.
Place in the oven at 150c for 30 minutes.
When removed from the oven sprinkle with caster sugar and serve chilled.
