  • Cooking time 15 -20 minutes (cooking time)
  • Serves 10

  • 675g Self raising flour
  • 125g Caster sugar
  • 170g Butter
  • 250ml Milk
  • 50g dried cranberries
  • 65g Mixed peel

  • 40g mincemeat
  • 20g Sultanas
  • Zest of an orange

  1. Mix the sugar, flour and margarine to a crumb add the peel, mincemeat, cranberries, sultanas, zest and cinnamon and mix together.
  2. Then add the eggs and milk and mix until the mixture starts to come together as a dough. Be conscious of over mixing. You'll notice this if your mixture becomes stiff, losing its softness and elasticity.
  3. Roll out and portion into 10 portions, brush with an egg mix and cook for 15-20 minutes at 160 degrees celcius.
  4. Once out of the oven you can brush with melted butter and sprinkle with a little sugar and cinnamon.
