Lady Brunner's gingerbread

This rich, sticky gingerbread was a family favourite at Greys Court. If you visit Greys Court at Christmas, you may catch a heavenly whiff of treacle and spice as you come down the stairs. Our volunteers will be baking Lady Brunner's recipes in her kitchen, but why don't you give this one a go at home before you visit?

  • Preparation time 20 minutes (prep. time)
  • Cooking time 40 minutes (cooking time)
  • Serves 10


  • 170g butter or margarine
  • 225g golden syrup
  • 140g soft brown sugar
  • 225g black treacle
  • 1tsp ginger or mixed spice
  • 250ml milk
  • 340g self-raising flour
  • large egg
  • 225g raisins or sultanas
  • 1tsp bicarbonate of soda


  1. Melt the butter in a large saucepan.
  2. Add and warm together golden syrup, sugar, black tracle and spice.
  3. Add milk, dried fruit, egg (beaten), bicarbonate of soda dissolved in a dessert spoon of hot water and flour stirred in with a whisk.
  4. Spread in a large lined and greased roasting tin and cook for 40 minutes at 180⁰C
