Florentine slice

A recipe dating back from when the Bankes family lived at Kingston Lacy, the Florentine slice is the perfect Christmas treat. This rich, gooey cake contains no flour, so is ideal for people who cannot eat wheat.

  • Serves 16


  • 350g/ 12oz good quality milk or plain chocolate
  • 350g/ 12oz  mixed dried fruit (raisins, sultanas, currants, peel)
  • 100g/ 4oz glacé cherries
  • 100g/ 4oz shredded coconut
  • 100g/ 4oz caster sugar
  • 50g/ 2oz butter, melted
  • 2 eggs, beaten


  1. Line a 20 x 27.5cm (8 x 11in) tin with foil
  2. Melt the chocolate and spread evenly in the base of the tin
  3. Leave to cool in the refrigerator until set
  4. Preheat the oven to 180°C, 350°F, gas mark 4
  5. Mix together the dried fruit, glacé cherries, coconut, sugar, butter and beaten eggs and spread evenly over the chocolate
  6. Bake for 25 minutes until golden brown
  7. Remove from the oven and leave to cool in the tin
  8. When cool, place the tin in the refrigerator until really cold
  9. Cut into fingers and turn out of the tin.
