Mrs Jenks' Petticoat Tails

Is there anything more warming than gathering around a cosy fire with a hot cup of tea and a plate of crumbly shortbread? Why not try making Mrs Jenks', Kingston Lacy's old cook, winter warmer?

  • Cooking time 20-25 minutes (cooking time)
  • Serves 90 small biscuits

Ingredients

  • 250g/9oz softened butter
  • 125g/4oz caster sugar
  • 350g/ 12oz plain flour
  • 125g/ 4oz ground rice

Method

  1. Cream together the butter and sugar
  2. Mix in the flour and ground rice until fully combined
  3. Knead lightly into a pliable ball
  4. Weigh out 15 x 50g/ 2oz pieces, roll each piece into a ball
  5. Press down with the palm of your hand on to a baking tray until about 8 or 9cm in diameter
  6. Tidy the edges by pressing a fork all around the circle of dough, then prick all over
  7. Cut each circle into six equal piece. They will be a bit larger when cooked, so leave some room to spread
  8. Bake at 160'C/ gas mark 2 for 20 - 25 minutes
