Minted green pea and lettuce soup

Follow this recipe to make a beautiful minted green pea and lettuce soup for your family and friends. The mint adds a refreshing hint while potatoes give the soup body.

  • Romaine (Cos) Lettuce 1
  • Onions 500g
  • Frozen Peas 500g
  • Fresh Mint 1 Bunch
  • Potatoes 1kg
  • Vegetable Stock 4ltrs
  • Salt & Pepper to taste


  1. Peel and chop the onions and potatoes. Add to a large saucepan and cover with the vegetable stock.
  2. Bring to the boil and then simmer for fifteen minutes (or until smooth).
  3. Once smooth, add the remaining ingredients and bring to the boil once again.
  4. Simmer for a remaining fifteen minutes (or until smooth).
  5. Serve hot.
