Minted green pea and lettuce soup
Follow this recipe to make a beautiful minted green pea and lettuce soup for your family and friends. The mint adds a refreshing hint while potatoes give the soup body.
- Romaine (Cos) Lettuce 1
- Onions 500g
- Frozen Peas 500g
- Fresh Mint 1 Bunch
- Potatoes 1kg
- Vegetable Stock 4ltrs
- Salt & Pepper to taste
- Peel and chop the onions and potatoes. Add to a large saucepan and cover with the vegetable stock.
- Bring to the boil and then simmer for fifteen minutes (or until smooth).
- Once smooth, add the remaining ingredients and bring to the boil once again.
- Simmer for a remaining fifteen minutes (or until smooth).
- Serve hot.
