Meet our team: Chloe Walczak
Assistant Catering Manager, Plas Newydd
Chloe started as a cook at Plas Newydd in March 2014. Since then she has worked her way to becoming the Assistant Catering Manager. She now looks after three busy outlets, and a team of 15. But who is Chloe and how did she end up at fabulous Plas Newydd?

What were you doing before you joined the National Trust?
Helped run the family business (Sarah’s Delicatessen and Coffee House) for 15 years this is where I learned my trade until we sold the business in 2014 (While working for the family I also worked part time at a local restaurant and pub), then took a break while relief caretaking for NT Holiday Cottages this is how I heard about the cooks position at Plas Newydd I applied and it was like a roller-coaster from there I am now close to my 2 year anniversary at Plas Newydd.
What was your first job?
At 14 I started working with mum in the deli after school and at weekends for £20 pocket money a week!
What did you want to be when you were at school?
I went through a phase of wanting to be a lawyer I think I thought it as a glamourous job at the time.
If you weren’t in catering, what would you be doing?
I am a total animal lover and so would probably be working as a zoo keeper (elephants or big cats probably)
What’s the best thing about your job?
Working at an amazing property with such great people – it’s like having a second home with an extended family also the opportunity to work closely with Penrhyn Castle is such a privilege as it builds a better team effort especially in catering.
And dare we ask… the worst?
Saying thank you and good bye to staff at the end of the season
If you had to invite 3 people (past, present or future) for dinner, who would they be… and what would you cook them?
Kurt Cobain, Eddie Izzard and Stan Lee or Robert Downy Jnr if Stan Lee was busy…and I would do Tapas as it’s social food.
Tea or Coffee?
Coffee but definitely NOT the instant kind!
Netflix and Chill or glad rags and party?
Mostly Netflix and chill but I do like to glad rags and party on the odd occasion especially if there is cocktails involved!
What’s your worst habit?

City break or beach holiday?
What’s you claim to fame?
I took part in “Gino D’campo’s Theres no taste like home” – they came to my home and filmed me cooking my dish at home, then I went to Castell Deudraeth and cooked my dish against 2 other competitors with their own dishes for a lunch service for a fully booked dining room…unfortunately I didn’t win!! I have also met the Hairy Bikers, Antonia Carluccio and Rick Stein was rumoured to have visited our deli but we we’re so busy no one noticed but he had left a message in our comments book saying “Wales’ answer to Fortnum and Mason”!
